Here is a new chicken recipe that Bridget found that I made for us last night. We all agreed that it was the best chicken we had ever had! Very tasty, and not too difficult to make.
Ingredients:
4 boneless chicken breast halves
5 ounces Boursin cheese with garlic and herbs
1 tablespoons flour
1/4 cup shredded carrot
1/4 cup chopped pecans
1/4 cup chopped parsley, divided
1/2 cup fine dry bread crumbs
2 tablespoons Parmesan cheese
2 tablespoons butter, melted
Preparation:
Place each chicken breast half between two pieces of plastic wrap. Pound lightly with the flat side of a meat mallet until flattened and thinned out.In a small mixing bowl, beat Boursin cheese with flour until smooth. Stir in carrot, pecans, and half of the parsley. Place about 1/4 of the Boursin mixture on each piece of chicken. Fold in two sides and roll up burrito style. Press edges to seal. In a small bowl, combine remaining parsley, bread crumbs, and Parmesan cheese. Brush chicken rolls with the melted butter then roll in bread crumb mixture. Place chicken rolls in an 8-inch square baking dish, seam side down. Sprinkle with remaining bread crumb mixture. Bake at 350° for 40 to 45 minutes, or until chicken is tender.
Boursin stuffed chicken serves 4.
Here are some more pictures that I took of our little miss Siobhán. Today our sweet angel turned 5 months old, so of course daddy had to document the occasion with some new photos. We took these before her bath and bed time, so she isn’t her chipper chipper self, but still smiling. Oh and if you’re wondering what is around her neck, it is her amber teething necklace.
Here are some more pictures that I took of our little miss Siobhán. She has this new thing of sticking her tongue out which is just adorable, although I couldn’t get it in action in any of these shots. But she does love to smile for mommy and daddy, which you can see!
After getting yet another large propane bill for a tank fill up after only a little more then a month going by, Bridget and I decided to turn down the thermostat a bit. We turned it down from the nice comfortable 72 degree level we are used to to 68 degrees. This is about as low as we can go with little Siobhán (although her room is still in the 70s at night).
As you can see, she is trying to keep warm by dressing in the nice sweater and hat that her Aunt Holly got for her. Bridget (who loves it when it’s 90 degrees out) is coping by adding a few (6 or 7?) layers of blankets to our bed! As for me, my mom keeps her thermostat in the 50s, so I am more able to cope with the change.
